1st of January rolls around and everyone is full of resolutions and changes their going to make throughout the year. They vary from “I’m going to stop smoking this year” and “This year I’m going on a diet, I’m going to eat healthily” and so forth.
Did you know that the 12th of January is the
official day most people give up on their New Year’s resolutions and that only 8% of people achieve their goals at the end of the year?
Hopefully you are one of that 8% who are sticking to your resolutions! For those whose resolution for the year was to eat healthily, stick to it! Cooking healthy food doesn’t have to be boring. I’m by no means a dietician and do enjoy the occasional treat but I’ve got a few healthy recipes full of greens and a few superfoods I’d like to share.
Back in 2018, I was asked by a local support group NeroHebrides to do a number of cookery demonstrations featuring easy to cook yet healthy recipes. One recipe I created, which will be posted down below, was very popular, full of goodness and very simple to make.
Stir fried Greens and Beets with Sesame and Fish sauce
Serves 2
125g Cooked beetroot, cut into evenchunks
100g kale
100g spinach
125g broccoli, cut into even stems
x3 garlic cloves, thinly sliced
2 tbsp – olive oil
1 tsp – caster sugar
1 tbsp – fish sauce
1 tsp – toasted sesame oil
- Heat the oil in a pan. Gently stir fry the broccoli, then the garlic, followed by the kale after a couple of minutes and then add the beetroot and spinach.
- Finish with a sprinkle of sugar, the fish sauce and the sesame oil.
- Serve immediately
